Basil and Blackberry Grilled Cheese with Arugula

- 4 slices wheat bread, the sturdier the better
- 2 tbsp butter
- 3 oz raclette cheese, thinly sliced
- ½ cup baby arugula
- 4 fresh basil leaves
- 1 tbsp blackberry jam
Spread butter on one side of all four slices of bread - this side will be outside of the sandwich.
On each of the non-buttered side of two of the bread slices, lay two leaves of basil, followed by half of the sliced raclette. On the cheese, spread half a tablespoon of blackberry jam, then top with ¼ cup baby arugula. Top with another slice of bread, buttered side up.
In a dry pan heated over medium heat, grill the sandwiches, about 2 minutes per side or until the raclette is melted and oozing over the edges. Press down on the sandwiches with your spatula as they cook and cover with a lid after flipping to help melt the cheese.
Remove the golden brown sandwiches from the heat and slice in half before digging in. Serve warm.
