Smoked Salmon Crostini with Asparagus Mousse
These crostini make the perfect appetizer or snack for any gathering. Quick, easy to make, and irresistibly delicious - they'll fly right off the plate.

- ½ bunch asparagus
- olive oil
- kosher salt
- black pepper
- 2 cloves garlic
- 4 oz. cream cheese
- 1 small baguette
- 4 oz. smoked salmon
- 1 lemon
- 3 tbsp chopped fresh chives
Preheat the oven to 400°F.
Place the asparagus on a baking sheet. Drizzle lightly with olive oil and season with kosher salt and black pepper. Peel and place the garlic cloves on the sheet with the asparagus.
Roast the asparagus until just tender, about 10-15 minutes, depending on the size of your asparagus.
In a food processor, blend the cooked asparagus, the garlic cloves, the cream cheese, and additional salt and pepper to taste, until smooth.
Turn your oven to broil.Slice the baguette into ½ inch thick slices. Brush lightly with olive oil on both sides. Arrange the slices on a baking sheet. Toast the baguette slices under the broiler, turning halfway to toast both sides. *Do not walk away, watch as they toast, as these can burn quickly! Spread each crostini with the asparagus mousse. Top each with a piece of smoked salmon. Lightly drizzle the crostini with olive oil and lemon juice and sprinkle with the chives.
Serve immediately and enjoy.
