Maple Honey Mustard Smoked Chicken Wings

Equipment

  • Smoker (I use an electric smoker)
  • Meat Thermometer

Ingredients
  

  • 4 lbs chicken wings patted dry
  • 2 tsp black pepper freshly ground
  • 2 tsp kosher salt
  • apple wood chips for the smoker
  • ¼ cup chopped fresh chives

Maple Honey Mustard

  • cup Dijon mustard
  • ¼ cup honey
  • ¼ cup 100% pure maple syrup
  • ½ cup mayonnaise
  • 2 tbsp white vinegar
  • ¼ tsp black pepper freshly ground
  • ½ tsp kosher salt
  • ¼ tsp cayenne pepper

Instructions
 

  • Preheat your electric smoker to 225 °F and prep with wood chips according to the directions for your model (I prefer Apple wood for chicken wings).
  • Season the wings evenly with the black pepper and salt.
  • Place the wings on the grates in the smoker and smoke for approximately an hour and a half or until the internal temperature reads 165 °F. Refill wood chips throughout cooking as directed by your model of smoker.
    Heat your grill over high heat.
  • Once the wings reach 165 °F, crisp them by tossing them onto a grill on high heat for 5 minutes, flipping throughout.
  • Toss or drizzle with the Maple Honey Mustard, sprinkle with chopped chives, and serve.

Maple Honey Mustard

  • In a medium bowl, combine all ingredients. Whisk until smooth and store in the refirgerator until ready to use.
