I love a a good fresh veggie slaw. When made well, they can provide the perfect pop of crunch and acidity to a dish, while showcasing vegetables in a fresh way. This Sugar Snap Pea and Radicchio Slaw is not only incredibly beautiful, but also incredibly delicious. The sugar snap peas are sweet and crisp while the radicchio is balanced and bitter. A simple dressing of olive oil, vinegar, honey, and mayo binds the flavors together without overpowering anything. This slaw is delicious on its own, but also works great as a sandwich topping, taco addition, side dish, and more. The colors of this dish are also absolutely beautiful, brightening any spring table. Best of all? It can be made in just minutes.
Sugar snap peas and radicchio are definitely the stars of this dish, with the sweet and bitter flavors contrasting each other beautifully. The only other veggie I like to throw in is thinly sliced green onions. These are mild enough not to take over the dish, but add the perfect amount of oniony bite that I look for in a slaw. This is what makes it so good on sandwiches!

Sugar Snap Pea and Radicchio Slaw
Ingredients
- 1 pound sugar snap peas
- 1 small head radicchio
- 3 green onions
- 2 tbsp mayonnaise
- ½ tsp freshly cracked black pepper
- 1 ½ tsp kosher salt
- 1 tbsp honey
- ¼ cup olive oil
- ¼ cup white wine vinegar
Instructions
- Thinly slice the sugar snap peas, radicchio, and green onions.
- In a large bowl, combine the peas, radicchio, green onions, mayonnaise, black pepper, salt, honey, olive oil, and white wine vinegar.
- Stir to combine. Taste, and add more salt, oil, pepper, or vinegar if desired.
- Refrigerate, or serve immediately.
