Asian Sticky Charred Sweet Peas

These peas are salty-sweet goodness, charred in a pan for an added dimension of flavor. This veggie side is sure to bring a pop of flavor to your next meal.

Ingredients
  

  • 1 tbsp peanut oil or other high-heat stable oil
  • 1 tbsp toasted sesame oil
  • 4 cups sugar snap peas
  • 2 tbsp soy sauce
  • 3 tsp gochujang, (adjust up or down based on your spice-level preference)
  • 1 tsp garlic powder
  • 1 small bunch scallions chopped
  • 1 tbsp maple syrup
  • toasted black sesame seeds for topping

Instructions
 

  • Warm both oils over medium-high heat (the peanut oil will help stabilize the more sensitive sesame oil on the heat).
  • Add peas, stir to coat in oil, and cover. When peas have softened slightly (2-3 minutes), uncover, stir, and continue cooking uncovered until a char develops on the peas.
  • When peas are mostly charred and softened to your liking, stir in the gochujang, green onions, soy sauce, and garlic powder. Continue cooking and stirring until the green onions are just wilted.
  • Swirl in the maple syrup and turn heat to low, allowing the sauce to slightly caramelize around the peas. When the sauce has thickened (about 3 minutes), top with a sprinkle of toasted black sesame seeds.
  • Serve!
