Shrimp Scampi is an absolute classic. Although the sauce is very simple – essentially just butter, white wine, and garlic – it’s a flavor combination that stands the test of time. But that doesn’t mean it can’t be played with. For this Shrimp Scampi with Asparagus Noodles – a spring take on the classic dish – I swapped out traditional pasta for asparagus “noodles.” This fun switch utilizes one of my favorite in-season vegetables, makes the dish a little lighter, and tastes completely delicious. This recipe is so packed with flavor, I didn’t even miss the pasta – and that’s saying something coming from me. The tender swirls of asparagus provide the same chance to twirl up a bite while soaking up all that delicious sauce.
I made my asparagus noodles by slicing the spears into lengthwise quarters. With a good pairing knife, this is easier than you think and worth the time. If you can find very very thin asparagus, you may even be able to skip this step entirely, or just slice them in half!
There are few scents in the world quite as comforting to me as simmering garlic in oil, butter, and white wine. The shrimp cook very quickly in the sauce, making this perfect for a quick weeknight meal.

Shrimp Scampi with Asparagus Noodles
Ingredients
Shrimp Scampi
- 4 tbsp salted butter
- 1 tbsp olive oil
- 5 cloves garlic, minced
- ¾ cup dry white wine
- ½ tsp kosher salt
- ½ tsp freshly ground black pepper
- ¼ tsp crushed red pepper flakes (use more or less according to your preferred heat level)
- 2 tsp lemon zest
- 1 large lemon, juiced
- 2 pounds large shrimp, shelled and deveined
Asparagus Noodles
- 2 pounds fresh asparagus
- olive oil
- kosher salt
- freshly cracked black pepper
Instructions
Asparagus Noodles
- Preheat the oven to 400°F.
- Wash and slice the asparagus, lengthwise, in quarters, This will create the long, thin, noodle shape.
- Arrange the sliced asparagus on a baking sheet, drizzle lightly with olive oil, sprinkle with salt and black pepper, and mix to evenly coat.
- Roast the asparagus until tender and flexible, 15-17 minutes, stirring halfway through.
Shrimp Scampi
- In a large skillet, melt together the butter and olive oil over medium heat.
- Add the garlic and saute until just barely browning, about 1 minute.
- Stir in the wine, salt, black pepper, crushed red pepper flakes, lemon zest, and lemon juice. Bring to a simmer.
- Cook until sauce is halfway reduced, about 2 minutes.
- Stir in the shrimp and cook until shrimp are pink and just cooked through, about 3 minutes.
- Stir in the asparagus noodles to coat with the sauce.
- Serve, with an extra squeeze of lemon juice.
