Texas Caviar is a classic dish originating from the state of Texas in the 1940’s. However, I was first introduced to the dish (somewhat surprisingly) by my Italian grandmother, Mimi. My sister and I immediately fell in love with the festive dip, looking forward to each time she’d make it throughout the summer. Every Texas Caviar is a little bit different, but this version is my personal favorite. Crunchy corn, juicy tomatoes, creamy avocado, and hearty beans make every bite just a bit different in texture and flavor. Although my favorite way to enjoy Texas Caviar is with some corn chips, it is also delicious as a topping on grilled chicken or shrimp, or with tacos and quesadillas. Make a big batch and use it throughout the week – if it lasts that long.
As for ingredients, it couldn’t be simpler. Though I’m sure the seasoning blend could be replicated at home if you wanted, why mess with what works? Mimi always uses the Good Seasons Italian Dressing dry seasoning packet and I have to say – the flavor is just perfect. Also, like many dips and slaws, this Texas Caviar is even better the next day after the flavors marinate together. This dip (salsa? salad?) is super easy to throw together and mostly uses ingredients you likely already have in your pantry. If you have a few cans of beans and corn plus some oil and vinegar, you’re already halfway there! Take 5 minutes chopping and mixing and you’re done.

Mimi’s Texas Caviar
Ingredients
- 2 15 oz. cans black beans
- 2 7 oz. cans tex-mex or fiesta corn
- 1 ½ cups chopped fresh tomatoes
- ¼ yellow onion, finely chopped
- 4 green onions chopped
- 1 avocado roughly chopped
- 2 packs Good Seasons Italian Dressing Seasoning
- ¼ cup white vinegar
- ½ cup olive oil
Instructions
- In a large bowl, mix together the black beans, corn, tomatoes, yellow onion, green onions, and avocado.
- In a separate bowl, whisk together the seasoning packets, vinegar, and oil.
- Pour the dressing over the veggies and thoroughly mix.
- Serve as is or allow to marinate in the refrigerator for a few hours or overnight.
