Crisp fall days and Saturday night lights have me craving all the tailgate favorites. Smoked Chicken wings, in particular, are hard to beat. The earthy, woodsy scent of the burning apple chips plus the crisp, savory wings themselves are a combination that just screams fall tailgate. The only thing that makes these Maple Honey Mustard Smoked Chicken Wings even better is that creamy, sweet, tangy maple honey mustard. It complements every smoky note. Even if football weekends aren’t your thing, there’s plenty of reasons to whip these up. If you’ve never tried smoking meats before, chicken wings are a great start. They cook quickly and are hard to mess up! But this maple honey mustard sauce is so simple and delicious, it would go well on any kind of chicken, smoked or otherwise.
There’s a lot to love about chicken wings. They’re a fun party food or gameday snack – easy to eat, easy to share, and easy to customize. I’ve gotten spoiled with smoking my wings though. The smoke just adds a layer of cozy depth that’s almost impossible to achieve any other way.
But despite how delicious smoked wings are on their own, sometimes I’m just craving a sauce to kick things up and add some smoothness. I think Honey Mustard is an underrated wing sauce. Smooth, creamy, a little sweet and a little spiced. When you want more tang than ranch but not as much spice as buffalo sauce, honey mustard is the perfect middle ground.

And this particular honey mustard couldn’t be easier to throw together. You most likely already have all the ingredients on hand. I like to use half honey and half maple syrup because 100% pure maple syrup has a rich earthiness that I find so addicting and it perfectly complements the smoky wings.
Chicken wings are also a great introduction to smoking if you are new to it. Chicken wings have enough skin and fat that they don’t dry out as easily as leaner meats, but they are small enough that they cook relatively fast. No hours of monitoring temperatures and replenishing woodchips!
I skip my usual spice rub on the smoked wings when I plan to use a sauce with them. Simple salt and pepper is all they need to become the perfect juicy, meaty canvas for any sauce you like! In just over an hour, you’ll have your very own batch of deliciously addictive wings.

Maple Honey Mustard Smoked Chicken Wings
Equipment
- Smoker (I use an electric smoker)
- Meat Thermometer
Ingredients
- 4 lbs chicken wings patted dry
- 2 tsp black pepper freshly ground
- 2 tsp kosher salt
- apple wood chips for the smoker
- ¼ cup chopped fresh chives
Maple Honey Mustard
- ⅔ cup Dijon mustard
- ¼ cup honey
- ¼ cup 100% pure maple syrup
- ½ cup mayonnaise
- 2 tbsp white vinegar
- ¼ tsp black pepper freshly ground
- ½ tsp kosher salt
- ¼ tsp cayenne pepper
Instructions
- Preheat your electric smoker to 225 °F and prep with wood chips according to the directions for your model (I prefer Apple wood for chicken wings).
- Season the wings evenly with the black pepper and salt.
- Place the wings on the grates in the smoker and smoke for approximately an hour and a half or until the internal temperature reads 165 °F. Refill wood chips throughout cooking as directed by your model of smoker.Heat your grill over high heat.
- Once the wings reach 165 °F, crisp them by tossing them onto a grill on high heat for 5 minutes, flipping throughout.
- Toss or drizzle with the Maple Honey Mustard, sprinkle with chopped chives, and serve.
Maple Honey Mustard
- In a medium bowl, combine all ingredients. Whisk until smooth and store in the refirgerator until ready to use.
