For many of us, the air has begun to cool and fall has started to set in. With days getting shorter and nights getting colder, we could all use a cozy dinner for comfort and warmth. This Creamy Caramelized Onion, Mushroom, and White Wine Chicken is perfect for the occasion. Chicken is seared to a perfect golden brown before the same pan is used to soften and caramelize onions and mushrooms. White wine is used to soak up all the flavors of the pan and form the base for a flavorful cream sauce. Spooned over pasta, this recipe is the epitome of comfort. I used fusilli col buco as my pasta of choice for the beautiful spirals and fun texture, but any long pasta would work here. This is the perfect dish to warm your kitchen, your body, and your soul on a chilly autumn night.
Another bonus to this recipe is that it all comes together in basically one pan (I don’t count the pot for boiling the pasta – very easy to clean)! This makes it perfect for weeknight dinner or lazy Sundays when you don’t want to spend all day in the kitchen. However, the combination of rich, cozy flavors makes it taste like it’s been cooking all day!
Fusilli col Buco pasta is like bucatini in that it is hollow in the center, but it has a fun spiral shape to it. This pasta was invented in Naples, Italy when pasta makers wrapped bucatini around knitting needles as it dried. Although I love the look and texture of fusilli col buco, feel free to use whatever pasta you have on hand.
Adding a little pasta water to the final sauce thins it out just enough and the starch helps the sauce adhere to the pasta. You can adjust the thickness of your sauce by adding more or less pasta water, as needed. Either way, the final sauce will be irresistible. Pro-tip: make more than you think you need.

Creamy Caramelized Onion, Mushroom, and White Wine Chicken
Ingredients
- 4 large chicken breasts
- kosher salt
- freshly cracked black pepper
- ¼ cup all-purpose flour
- 2 tbsp olive oil
- 4 tbsp salted butter
- 4 large cloves garlic minced
- 2 yellow onion sliced
- 16 oz. crimini mushrooms sliced
- 1 ½ cups dry white wine
- 1 cup heavy cream
- ½ cup Parmesan cheese grated
- 12 oz. long pasta of your choice
Instructions
- On a cutting board, cover each chicken breast with plastic wrap and, using a mallet or heavy pan, pound each breast to an even thickness. Season the chicken breasts on both sides with kosher salt and black pepper. Lightly dust each with flour.
- In a large skillet, heat the olive oil over medium-high heat. Cook the chicken breasts for approximately 4 minutes per side, until evenly browned and cooked through. Remove to a separate plate and cover.
- Into the same skillet, add the butter and reduce the heat to medium. Add the sliced onions and mushrooms and cook, stirring often, until softened, about 7 minutes. Stir in the minced garlic and cook 3 minutes longer. Season with salt and black pepper.
- Bring a large pot of water to a boil.
- Bring the heat up to medium-high. Pour in the white wine and simmer until reduced by half, about 5 minutes. Cook the pasta according to package instructions.
- Reduce the heat back to medium and stir in the cream and Parmesan cheese. When the sauce is bubbling, return the chicken to the pan.When the pasta is cooked, stir in the pasta, plus ⅓ cup pasta water, into the sauce.
- Simmer 1-2 minutes more until the sauce is slightly thickened. Serve immediately.
