Enter bright basil, peppery arugula, and jammy blackberries to elevate this indulgence to the next level. This Basil and Blackberry Grilled Cheese with Arugula is insanely addicting and hits every flavor note you could want. Salty, sweet, herby, and cheesy? This grilled cheese has it all.

One of the best parts about grilled cheeses is how quick and easy they are to make. Whether its a lunch break at home or a midnight snack, this simple sandwich takes barely 10 minutes from start to finish. There’s also nearly infinite room for customization. The cheese, bread, and any toppings can all be switched out in endless combinations. For this rendition, I picked raclette cheese for its buttery flavor and insane melting ability. If you can’t find raclette in your store, any mild, easily melting cheese such as young gruyere, fontina, or emmental will work.

I am also in love with the flavor combination of basil and berry. In fruit salads, savory salads, popsicles, drinks – I love them all. That’s why basil and blackberry jam work so well together here. The jam melts into the cheese almost creating a sweet sauce and the basil wilts and becomes fragrant, balancing the mildness of the cheese. All thats needed now is the bright, peppery bite from the basil arugula that offsets the sweet jam. Every flavor is perfectly balanced yet not overwhelming.

Basil and Blackberry Grilled Cheese with Arugula

Crispy, melty, gooey, and sweet – this grilled cheese hits every spot.

Ingredients
  

  • 4 slices wheat bread, the sturdier the better
  • 2 tbsp butter
  • 3 oz raclette cheese, thinly sliced
  • ½ cup baby arugula
  • 4 fresh basil leaves
  • 1 tbsp blackberry jam

Instructions
 

  • Spread butter on one side of all four slices of bread – this side will be outside of the sandwich.
  • On each of the non-buttered side of two of the bread slices, lay two leaves of basil, followed by half of the sliced raclette. On the cheese, spread half a tablespoon of blackberry jam, then top with ¼ cup baby arugula. Top with another slice of bread, buttered side up.
  • In a dry pan heated over medium heat, grill the sandwiches, about 2 minutes per side or until the raclette is melted and oozing over the edges. Press down on the sandwiches with your spatula as they cook and cover with a lid after flipping to help melt the cheese.
  • Remove the golden brown sandwiches from the heat and slice in half before digging in. Serve warm.
